Cordial Cherries (½ lb.)
We take the biggest, most juicy maraschino cherries available and coat them in our own cordial recipe before we hand dip each one in chocolate.
What does that mean? Well, it means our cherries are VERY fresh and sometimes that means you will receive them when they are still in the cordial-ing phase.
To make our cordial cherries we take each cherry and coat it with our homemade fondant (which hardens) and then the whole thing is dipped in chocolate.
After a period of time, the natural juices in the cherries blend with the fondant which melts back down to create a delicious cordial center around the fruit. This process can take up to a month to fully happen.
If your cherries are a bit early in that process you may see or taste a bit of that white fondant when you bite into your cherry as it is still on it's way to becoming 100% cordial. There may also be variation of this progression within the same box. As some cherries get a thicker coat of fondant or start out more "wet" than others.
This is the nature of scratch-made cherry cordials. If you find that is not your favorite, then leave the cherries on the counter for a few more days and taste again.
